This recipe is part of my Freezer Meal series from my Zaycon Foods chicken I received.
When I got my 40 lbs of chicken from Zaycon Foods I start searching my favorite blogs for some easy freezer meals. This one comes from Six Sisters’ Stuff! I didn’t know there was a restaurant called Bajio’s but this chicken is sweet and reminiscent of the sweet pork at Costa Vida and Cafe Rio. You can eat this chicken as a salad with black beans, cheese, lettuce, avocado, tomatoes, and other yummy toppings. We ate them as burritos with those toppings and sour cream and guacamole.
Slow Cooker Bajio Chicken
5 chicken breasts
1/2 cup salsa
1 Tbsp cumin
1/2 cup brown sugar (more to taste)
1 4 oz. can diced green chilies
6 oz. Sprite (1/2 can)
Directions
Combine all ingredients in a crock pot. Cook on low for 5-6 hours. Remove chicken and shred. Return to crock pot and cook 1 more hour. Thicken the juices with a little cornstarch mixed in water.
Freezer Meal
I made this a freezer meal. I added all of the ingredients to a gallon ziplock bag and froze it. You can also make the chicken in the slow cooker and then freeze the shredded chicken in a bag. Either way thaw for 24 hours in refrigerator and then reheat, or cook depending on your circumstance.
