In two weeks my cute son pictured above will be starting Kindergarten. I’m not sure where the time has gone, or how I became old enough to have two children in school, but alas, it has happened. Now my task is to create an after school routine, that involves delicious after school snacks, so I can hear about my children’s day and get them fueled up to start on their homework. This after school snack needs to be tasty for them and for myself, after all, I could use some fuel to help with the homework too.
While browsing the aisles at Walmart and thinking about things my children like I decided to pick up some Cheese Bagel Bites, Delimex Chicken Taquitos and Apple Cinnamon Taquitos.
Both the Bagel Bites and Delimex can be found in the frozen food section. In my Walmart the Delimex was in two different locations with tons of different flavors. I had no idea there were sweet taquitos so that’s why I picked up the Apple Cinnamon ones too. Be sure to clip the Bagel Bites coupon and the Delimex coupon before shopping to save a little money.
One thing that I love about the Bagel Bites and Delimex snacks is that they don’t take very long to prepare. My children’s bus arrives at the same time everyday so I know that I need to pop the after school snacks into the oven at 3:45pm and they will be ready for my children when they walk in the door at 4pm.
So now that I have the delicious after school snacks for my kids, I wanted to come up with some fun ways to present it to them. At our house we are all about the sauce! Do your kids like a variety of sauce options? We sure do. So I thought the best way to ensure my kids really enjoy their Delimex chicken taquitos is to provide them with a variety of sauces. Yum! I set out honey mustard, ketchup, guacamole, ranch, salsa and sour cream. It was a nice variety of colors and flavors.
I also decided to make a vanilla icing to drizzle on the Apple Cinnamon Taquitos. I know I’m way more inclined to eat something with frosting on top. This icing recipe is super easy.
Vanilla Icing Drizzle
- 3 cups powdered sugar
- 1/2 tablespoon butter
- 4 tablespoons hot water
- 1 tsp Vanilla extract
Stir together all of the ingredients. If you need more water to make the frosting a good piping consistency, add 1 tsp. of hot water at a time. If you end up adding too much water, just add a little powdered sugar until you get the perfect consistency. Scoop into a sandwich bag, cut off the tip of the corner of the bag and pipe across the taquitos.
Now onto the Bagel Bites. I knew my son would like them plain, but my daughter and myself are interested in adding a little pizzaz to our food. Bagel Bites are made with real cheese and homemade 0g of trans fat. I came up with a fun idea to create Italian Club Pizza Bites. These mini sandwiches are easy and good. Italian Club Bagel Bites
- Favorite Bagel Bites
- Pepperoni
- Canadian Bacon
- Sundried Tomato Pesto spread
Sundried Tomato Pesto
- 8 oz. cream cheese
- 2 Tbsp. Classico Sundried Tomato Pesto
Combine cream cheese and pesto together to make a delicious spread.
To make this easy sandwich just layer pepperoni, sundried tomato pesto and Canadian bacon onto a cooked bagel bite and top with another. If desired, top with a little bit of sundried tomato pesto.
I prepared a practice round of afternoon snacks for my kids. My son needs help with transitions, so as we talked about school, the bus, homework and after school we ate our practice round of after school snacks. Check out this amazing spread of delicious snacks thanks to Bagel Bites and Delimex.
I kept my kids downstairs while I prepared the food so that my after school snack feast would be a surprise. They were so excited when they came upstairs and saw all of their options. They were excited about the chicken taquitos and all of the dip. They couldn’t wait to try the Bagel Bites for the first time. They were really excited for the apple cinnamon taquitos with the vanilla icing drizzle. They were excited to try new foods and start talking about school. Even my baby got in on the snacking action.
At the end of the day, all that counts is feeding my kids great food with quality ingredients. I loved the bonding that took place over our practice after school snack afternoon and I look forward to the great memories we are going to make this school year. After school snack time will be the highlight of my day and now that my kids have had a preview of what’s to come, I think it’ll be the highlight of their day too.

My kids are huge fans of interactive snacks as well! We had Bagel Bites and Delimex just this weekend. 😉 I haven’t seen the Apple Cinnamon Taquitos though… must get a hold of a box of those. I think dipping must have universal kid appeal. Mine would love to try your spread.
