Shrimp and Sausage Pilau Recipe

This week eMeals is talking about their eMeals Clean Eating Meal Plans.  I love that eMeals has meal plans for all different kinds of dietary needs and wants. The choices are amazing and meant to help you avoid the headache of meal planning. Today I’m going to showcase a recipe from the Clean Eating plan.

Shrimp and Sausage Pilau Recipe

Ingredients

  • 3 tablespoons olive oil
  • 1 (12-oz) package nitrate-free smoked pork or turkey sausage, sliced
  • 2 cloves garlic, minced
  • 1/2 teaspoon crushed red pepper
  • 1 (8-oz) container chopped onion, celery, and bell pepper (or use 1/2 cup of each chopped)
  • 1 (28-oz) can whole tomatoes, undrained and chopped
  • 1 1/2 cups uncooked brown rice
  • 1/2 teaspoon salt
  • 3 cups fish stock or vegetable broth
  • 1 lb large fresh or frozen shrimp, peeled and deveined
Instructions

  1. Heat oil in a large deep skillet over medium-high heat; add sausage, and brown 3 to 4 minutes.
  2. Remove sausage from pan; add garlic, crushed red pepper, and chopped vegetable mix.
  3. Sauté 5 minutes or until tender. Add tomatoes, rice, salt, broth and sausage; bring to a boil.
  4. Cover, reduce heat, and simmer 45 minutes or until rice is almost tender; add shrimp, and cook 3 minutes longer or until shrimp turn pink.

Recipe Serves 6
