Pineapple-Tomato Roasted Mahi Mahi

eMeals is at it again knocking delicious Paleo recipes out of the park!

Pineapple- Tomato Roasted Mahi Mahi

Ingredients

  • 6 (6-oz) skinless wild-caught mahi mahi fillets (or use salmon)
  • Coconut oil cooking spray
  • 1/2 tsp salt
  • 1/2 tsp lemon pepper seasoning
  • 2 Tbsp chopped fresh cilantro
  • 4 Roma tomatoes, sliced
  • 2 cups cubed pineapple

Instructions

Preheat oven to 400°F. Place mahi mahi on a rimmed baking sheet coated with cooking spray. Season salmon with salt, lemon pepper and cilantro. Top mahi mahi with tomatoes and pineapple. Bake 12 minutes or until mahi mahi flakes with a fork.
