As a nursing mother I now have to be careful what I eat! Booo! My baby’s tummy doesn’t like some of the things I have been eating, so I have been cutting out different foods trying to figure out what is upsetting him. Right now I am off chocolate, BOOOO! But I need to have a treat to eat, so I have been making peanut butter blossoms without the blossom (the chocolate kiss)! They are pretty yummy, so I thought I would share.
Peanut Butter Blossoms
1 3/4 Cup Flour
1 tsp Baking Soda
1/2 tsp Salt
1/2 Cup Sugar
1/2 Cup Brown Sugar
1/2 Cup Shortening
1/2 Cup peanut butter (I use creamy, I don’t like chunks)
1 Egg
2 TBS Milk
1 tsp Vanilla
48 Chocolate Kisses (if you can eat chocolate… LUCKY!)
Combine ingredients in a large mixing bowl. Mix dough at low speed until dough forms. Shape dough into balls using a rounded teaspoonful for each cookie. Roll balls in sugar. Place on ungreased cookie sheet. Bake at 375 for 8-10 minutes (I do 7 minutes because I like them really soft) Top each cookies with a kiss, press firmly until it cracks around the edge. Put back in the oven for 2 minutes.
*For a variation use the same dough and place the balls in small muffin tins. Bake for 8 minutes then place a small Reeses peanut butter cup in the middle.*
I have seriously been making these cookies every other day. When we run out, it’s time for a new batch! Luckily I have a very cute helper! Since we are just making peanut butter cookies, and there is an unwritten understanding that all peanut butter cookies must have fork marks, my 3 year old gets that job!
