My sister and I just had a conversation about our favorite summer “salads” and it inspired this post of 5 of my favorites! Sorry I don’t have any delicious looking photos to add, but these recipes are fabulous! Enjoy!!
1. Berry Spinach Salad–
The easiest by far is just filling your plate with spinach, slicing berries (strawberries are my favorite) on top, and adding almonds or your favorite nut. Top it off with poppy seed dressing and you’ve got a quick and easy salad!
2. Veggie Salad–
I LOVE my veggies. So I make a big salad without lettuce-
Chop the following veggies:
1 carrot
½ green pepper
½ red pepper
1 head broccoli
1 stem celery
1 avocado
Add veggies you like, skip the veggies you don’t.
Shredded cheese to taste; I like Colby or Mild Cheddar
Top with the dressing of your choice- I like ranch
If I have lunch meat, I will chop it up and add a little protein. Or, if I’m making chicken nuggets for my kiddos, I’ll chop those up and add them hot.
3. Avocado chicken salad–
1 lb. skinless, boneless chicken breasts, cooked and shredded into long thin pieces
1 c. thinly sliced celery
3/4 c. seedless red or green grapes, halved
1/3 c. golden raisins
1/2 c. walnuts, toasted and chopped
1 avocado chopped
1 Golden Delicious apple chopped
1 c. bottled mayonnaise
lemon juice to taste (I use about 2 tbsp)
Toss avocado and apple in lemon juice in a large bowl. Add chicken, fruits and veggies, then add mayo. Salt and pepper if needed. Can be served as lettuce wraps, or my favorite, between 2 slices of French bread! Woot!
4. Pasta salad
1 pkg Cooked and chilled pasta
1 green pepper chopped
1 red pepper chopped
1 can black olives sliced
1 can green olives sliced
1 sm onion diced
1 ½ lbs cheese (whatever you like- I like a combination of Colby and pepper jack)
1 lb Pepperoni , chicken or you choice or protein
1 bottle Italian seasoning
Toss it and enjoy!
5. Quick Broccoli salad
2 bunches broccoli
1/2 c. sweet onion, chopped
2 c. shredded Cheddar cheese
1 lb. cooked, chopped bacon
1 c. mayonnaise
1/2 c. sugar
2 tbsp. vinegar
Make the dressing with the mayo, sugar and vinegar. Cut florettes of broccoli in bowl and add the onion, cheese and bacon. Pour the dressing on broccoli mixture before serving.
