Lemon Thyme Chicken

Lemon-Thyme-Chicken

Lately I have been talking about my new healthy plan. Even though I have been using Take Shape for Life to lose weight and get healthy, I could describe my eating habits as fitting within the Paleo diet. eMeals offers a Paleo Meal Plan to make this way of life super easy! Here is one of their delicious recipes from that plan Lemon Thyme Chicken.

Ingredients:

  • 6 (12-oz) bone-in, skin-on chicken breasts
  • 4 cloves garlic, minced
  • 1/4 cup chopped fresh thyme
  • 1 Tbsp grated lemon rind
  • 1 Tbsp coconut oil, melted
  • 2 Tbsp fresh lemon juice
  • 1 tsp salt, 1 tsp pepper

Directions:

Preheat oven to 400°F. Run fingers under skin of chicken breasts to loosen skin from flesh. Combine garlic, thyme, lemon rind, oil, lemon juice, salt and pepper. Rub mixture under chicken skin. Place chicken on a rack in a broiler pan rubbed with oil. Bake 45 minutes. Increase oven temperature to broil; broil chicken 3 to 5 minutes or until skin is crisp. (Shred and reserve 3 breasts for Chicken Stir-Fry recipe.) Cut remaining chicken into serving-size pieces.
