We have been trying to make more of an effort to stay on budget with our grocery shopping. As often happens, summer threw our routine, schedule and budget out the window. Now it is time to get back on track.
Yesterday I was going through the pantry knowing we were going to have chicken for dinner, but what kind? I was looking at all my options and came across an old bag of croutons. DING! Instead of throwing out these croutons (how can you tell if they are stale anyways? They are supposed to be crunchy.) I decided to grind them up and coat my chicken with them. This is a healthy alternative to making crispy chicken. No frying, no grease. It ended up being very yummy!
Easy 2 Step Crispy Crouton Chicken
10 Chicken tenders – thawed
2 Cups crushed croutons (which means you need about 3 cups or so of whole croutons)
Egg wash – optional
Directions
Pre-heat over to 350˚. Place whole croutons in plastic zip locked bag and crush with rolling pin. Once crumbs are desired size, pour into bowl for easy coating. One at a time coat chicken tenders in egg wash (if desired, I didn’t do this) then in crouton crumbs. Place on greased, foil lined cookie sheet and bake for 30 minutes at 350˚. Depending on the size of your chicken tenders they may need more or less time.
I served our chicken with some flavored rice and apple slices, but you can use the side dishes you family loves! We dipped our chicken in ranch dressing and that was yummy too!
