I love when eMeals sends me recipes to share with you. This delicious meal is from their  Clean Eating Meal Plans. If you aren’t familiar with eMeals it is a meal planning service that really caters to your families dietary needs. There are a variety of meal plans from traditional, slow cooker, Paleo, low fat and more! If you have certain dietary restrictions, there is a plan for you! I love the way they have really created a product that makes life so much easier and caters to everyone’s needs! Without further ado, here is the recipe!

Ingredients
Chicken Legs:

  • 12 chicken legs
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup fresh lime juice
  • 1 tablespoon grated lime rind
  • 3 tablespoons low-sodium soy sauce
  • 3 tablespoons honey
  • 2 tablespoons olive oil

Corn:

  • 6 ears fresh corn
  • 1/4 cup reduced-fat olive oil mayonnaise
  • 1/4 cup plain yogurt
  • 1/4 cup chopped fresh cilantro
  • 1 clove garlic, minced
  • 1 tablespoon smoked paprika
  • 1/2 cup freshly grated Parmesan cheese
  • 2 limes, cut into wedges

Instructions

Place chicken legs in a large zip-top plastic freezer bag; whisk together cilantro, lime juice, lime rind, soy sauce, honey and olive oil. Pour marinade over chicken in bag; seal and refrigerate 1 hour. Preheat grill to medium-high heat. Remove chicken from marinade, discarding marinade. Grill chicken legs 12 minutes or until done, turning occasionally.

Pull husks back from corn; remove silks and replace husks. Soak corn in a bowl of cold water 10 minutes; drain and shake off excess moisture. Preheat grill to medium-high heat. Grill corn 12 minutes or until tender, turning occasionally. Shuck corn. Stir together mayonnaise, yogurt, cilantro, garlic and paprika. Brush mayonnaise mixture evenly over corn; sprinkle with cheese. Squeeze lime juice over each serving.
