Mint is one of my favorite flavors. It’s also my go-to flavor. If we are getting ice cream, I’ll probably get Mint Chip. If we are getting fudge, I get mint. I LOVE it! Today I want to share these tasty Mint Chocolate Brownies. The brownies are from scratch but you can feel free to use a box mix if you want. I think I actually prefer the box mix because those tend to be chewy brownies and these homemade ones are very cake like. These recipes come from my favorite Hershey’s 100th Anniversary cookbook.
Homemade Brownies
- 1/2 cup (1 stick) butter or margarine, melted
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 ehhs
- 1/2 cup all-purpose flour
- 1/3 Hershey’s Cocoa
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chopped nuts (optional, I don’t use them since the Symphony Bars have nuts in them)
Directions
Heat oven to 350° F. Grease 9 in square baking pan.
In a medium bowl, stir together butter, sugar and vanilla. Add eggs; beat well.
Stir together flour, cocoa, baking powder and salt in separate bowl. Add to egg mixture; beat until well blended.
Stir in nuts, if desired. Spread batter into prepared pan.
Bake 25-30 minutes.
Mint Cream Cheese Frosting
- 3 ounces cream cheese, softened
- 2 cups powdered sugar
- 1/2 teaspoon vanilla
- 1/4 teaspoon peppermint extract
- 3-5 drops green food coloring
- 2-3 teaspoons milk (to get proper consistency)
Directions
In a small mixer bowl, beat al ingredients until smooth. Add 2-3 teaspoons of milk is need for spreading consistency.
Once brownies are fully cooled spread mint frosting on top and refrigerate for 30 minutes or until the frosting is set.
Creamy Chocolate Frosting
- 3 tablespoons butter or margarine softened
- 3 tablespoons cocoa
- 1 tablespoon light corn syrup or honey
- 1/2 teaspoon vanilla
- 1 cup powdered sugar
- 1 tablespoon milk
Directions
In a small mixer bowl, beat butter, cocoa, corn syrup and vanilla until blended. Add powdered sugar and milk. Best until smooth and of spreading consistency. Add addition milks 1/2 teaspoon at a time if needed.
One the mint frosting has set on the brownies, spread the creamy chocolate frosting on top. Cut into small squares. Makes 16 servings. Enjoy!
