Carrot Cake Waffles with a Cream Cheese Glaze

Carrot-Cake-Waffles-Cream-Cheese-Glaze-Final

Fall is my favorite time of year. For me it means all kinds of delicious foods with apples, spices and pumpkins. Though carrots aren’t included in my list of fall foods, Carrot Cake tastes similar to a spice cake to me, so Fall is the perfect time for Carrot Cake Waffles with a Cream Cheese Glaze. Enjoy the recipe below.

Ingredients
Waffles-
1/2 cup flour
1/2 cup brown sugar
1/2 cup finely shredded carrots
1/2 stick melted butter
1 teaspoon baking powder
1 Teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon allspice
1 egg & 1 egg yolk
Dash salt

Cream cheese glaze-
4oz softened cream cheese
3 teaspoons milk
3/4 cup powdered sugar

Carrot-Cake-Waffles-Ingredients

Directions
1. In a large mixing bowl, combine all of your waffle ingredient and mix well
2. Spray your waffle maker with a non stick cooking spray or grease with butter on the top and bottom
3. In a small mixing bowl, combine your milk, cream cheese, and powdered sugar, heat for 1-2 minutes, stirring every 30 second until smooth, place in freezer to thicken back up
4. Pour your waffle batter into your waffle maker
5. Cook on medium heat until for about 5 minutes
6. Turn your waffle maker off and carefully remove waffle
7. Pour a little (or a lot) of your cream cheese glaze on top and enjoy!
