Cajun Chicken Breast – Paleo Recipe

Cajun Chicken Breast

This week eMeals is talking about their Paleo Meal Planning. I love that eMeals has meal plans for all different kinds of dietary needs and wants. There are tons of plans to choose from including Breakfast, Lunch, Dessert Plan, Low Carb, Low Fat, Slow Cooker meals, 30 Minute Meals and more! The choices are amazing and meant to help you avoid the headache of meal planning. Today I’m going to showcase a recipe from the Paleo Meal Plan.

Cajun Chicken Breast

Ingredients

  • 2 tablespoons coconut oil
  • 6 boneless, skinless chicken breasts
  • 1/2 teaspoon salt, 1/2 teaspoon pepper
  • 1 teaspoon Cajun seasoning
  • 2 cloves garlic, minced
  • 1 (8-oz) container pre-chopped onion, bell pepper and celery mix (or use 1 cup frozen seasoning blend)
  • 3 large heirloom tomatoes, chopped
Instructions

  1.  Heat oil in a large, deep skillet over medium-high heat.
  2. Sprinkle chicken with salt, pepper and Cajun seasoning.
  3. Brown chicken 2 minutes per side; remove from skillet.
  4. Add garlic, onion mixture and tomatoes to skillet; sauté 3 minutes or until tender and slightly thickened.
  5. Return chicken to skillet; cover and simmer 10 to 12 minutes or until chicken is done.
