Beef Stroganoff and Spinach Strawberry Salad- Favorite eMeals Recipe

Success fromeMealsagain! This past weekend I made the Ground Beef Stroganoff with egg noodles and spinach and strawberry salad! It is seriously my new favorite meal!!IMG_0554

Ground Beef Stroganoff Recipe

  • 1 1/2 lbs ground chuck
  • 1/2 cup chopped onion
  • 8 oz sour cream
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 10.5 oz can cream of mushroom soup
  • 1 teaspoon beef bouillon
  • 12 oz egg noodles

Brown beef and onions. Add sour cream, salt, pepper, soup and bouillon; combine. Pour mixture into greased casserole dish and back at 350 for 30-45 minutes covered.  Prepare noodles according to package. Serve over cooked noodles.

Spinach Strawberry Salad

  • 1 pint strawberries, slices
  • 10 oz bag baby spinach
  • 2 oz almonds, toasted
  • 1/4 cup green onions
  • 1/2 cup Balsamic vinaigrette

Toast almonds in a small pan for 5 minutes (I added a little sugar to make them candied) on stove top. Toss together strawberries, spinach, almonds and green onions. Drizzle with dressing, serve chilled.

My whole family loved this meal! We are fighting over who gets the left overs for lunch today! Plus, I always love when a salad gets fought over, since sometimes it is hard to get vegetables down my family’s throat! Awesome meal, I hope you love it as much as I do!
