Chicken Piccata – Paleo Recipe

Chicken-Piccata
Paleo meals are the closest meal plan to my lifestyle. I love that eMeals provides me a weekly Paleo meal plan. I don’t have to think about food, just shop on the shopping list that comes with the plan. How easy is that? Ingredients

    • 6 boneless, skinless chicken breasts
    • 2 Tbsp coconut oil (or use avocado oil)
    • 3 cloves garlic, minced
    • 1 cup organic chicken broth
    • 1 Tbsp extra virgin olive oil
    • 3 Tbsp drained capers (or use finely chopped olives)
    • 3 Tbsp fresh lemon juice
    • 1 Tbsp pastured butter (optional)

Instructions

Pound chicken to 1/2-inch thickness. Cook in hot coconut oil in a large skillet until done. Remove chicken, and sauté garlic in pan 1 minute. Stir in broth, and cook until reduced to 1/4 cup. Remove from heat; stir in olive oil, capers, lemon juice and, if desired, butter. Serve sauce over chicken.
