Corn Salsa Recipe

**This is a re-post from last year. As we get closer to summer, my craving for corn salsa increases!! I hope you enjoy this yummy snack as much as we do!**

Happy Cinco de Mayo! In honor of this festive holiday I am going to share with you our FAVORITE summer salsa at our house!

 

Corn Salsa

2 cans diced tomatoes (or about 3 medium fresh tomatoes diced)

1 can whole kernel corn

1 can black beans

1/2 onion diced

Your choice of bell peppers diced

1/2 bunch cilantro chopped

Italian Dressing

 

Combine all of these ingredients (or at least the ones you like. We never use bell pepper, and rarely use black beans.) Then pour Italian dressing over the top. I start with about 1/2 cup and stir it up and see if I need to add more.Add Italian dressing to taste.

I don’t want to make it too soggy because then it won’t last as long in the refrigerator. This will last in the fridge for about 4 days and then it won’t be so great! This is so yummy with chips, in burritos, in quesadillas, basically on or in any Mexican food! We love and I hope you do too!

Hot Fudge Pudding Cake Recipe

One of my most favorite desserts is Hot Fudge Pudding Cake! This is a very tasty dessert, but it is also a very tricky dessert. This dessert starts off with the cake on the bottom and the pudding mixture on the top, but after baking it switches places! Very tricky! My favorite recipe for this super yummy dessert is from the Hershey’s 100th Anniversary Cook Book. This book is now 10 years old so you can get it cheap on Amazon.com!

Hot Fudge Pudding Cake

  • 1 1/4 cups granulated sugar
  • 1 cup all purpose flour
  • 7 tablespoons Hershey’s Cocoa, divided
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/3 cup melted butter
  • 1 1/2 teaspoons vanilla
  • 1/2 cup packed light brown sugar
  • 1 1/4 cups hot water
  • Whipped Topping (optional)

Heat over to 300 degrees F. In a bowl, stir together 3/4 cup granulated sugar, flour, 3 tablespoons cocoa, baking powder and salt. Stir in milk, butter and vanilla; beat until smooth. Pour batter into 8 or 9 inch square baking pan.

 

 

 

Stir together remaining 1/2 cup granulated sugar, brown sugar and remaining 4 tablespoons for cocoa; sprinkle mixture evenly over batter.

 

 

 

 

 

Pour water over top. DO NOT STIR!

 

 

 

 

Bake 35 to 40 minutes or until center is almost set. Cool 15 minutes; spoon into dessert dishes. Spoon sauce from bottom of pan over top of cake. Serve warm with whipped topping, if desired.

 

See what I mean? Magic, the pudding is now on the bottom! We don’t serve it with whipped topping, we just eat it warm. It is DELICIOUS!! Ranch Chicken Parmesan Recipe

I got off track from my eMeals meal plan for a couple weeks, but I am getting back into it. The nice thing is that while I wasn’t making those meals, I was still receiving the plans, so now I have a ton of meals ready for me and now I am prepared for several weeks! And of course the purpose of eMeals isĀ Easy & Delicious Dinner Ideas For Busy Families on a Budget. Have I told you lately that I love eMeals? Well I DO! Here is the latest favorite recipe from my lovely eMeals dinner plan.

Ranch Chicken Parmesan

Ingredients

  • 1 Cup dry breadcrumbs
  • 1/2 Cup parmesan cheese
  • 1 tsp seasoned salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1 1/2 lbs boneless skinless chicken breats
  • 1 Cup Ranch salad dressing
  • 1/4 melted butter

Directions

Mix together breadcrumbs, parmesan, salt, pepper and garlic powder. Dip chicken into the ranch dressing to coat both sides. Coat in the breadcrumb mixture. Place in a lightly greased 9×13 baking dish. Drizzle butter over each breast. Bake uncovered in a 400 degree oven for 30-35 minutes.

It is super good! We ate it with some steamed broccoli. Thanks eMeals for another great dinner! Enjoy!

Candied Nuts Recipe

I like to have a little bit of sweetness in my salads. I like that sweetness to be in the form of candied pecans! I was searching for some candied nuts recipe and came across a great candied nut recipe at Cafe Johnsonia, which she got from the Better Homes and Gardens Cookbook.IMG_0687

Ingredients:
2 cups whole nuts (pecans, walnuts, almonds) *I used more like 3 cups of nuts*
1/2 cup sugar
2 Tbsp. butter
1 tsp. vanilla extract

Instructions:
Place a piece of parchment paper or a silicone baking mat on a flat surface or baking sheet. (DO NOT USE WAXED PAPER!!! If you don’t have parchment or silicone, you can use a baking sheet coated with non-stick cooking spray.)

Heat a non-stick skillet over medium-high heat. Melt the butter and add the sugar and nuts.

Cook while stirring constantly with a wooden spoon until the sugar melts and turns a golden brown. (You may still see some sugar crystals that haven’t melted–it’s okay.)***I added more nuts because during this phase it seems like there was a lot of sugar on the nuts. I didn’t want them swimming in sugar, I just wanted a light coating of sweet on them, so I added another cup to thin out the amount of sugar sticking to each nut***

Remove pan from heat and add vanilla extract. (It will bubble up.) Stir vigorously.

Turn the hot nuts out onto the prepared surface. Spread nuts out evenly. Cool completely before using or eating.

These are so good. I have been snacking on them during the day and adding them to my dinner salads! It is super yummy!
