CHEESY CHICKEN & RICE CASSEROLE

1    Can (103/4oz) Campbell’s Cream of Chicken soup
1 1/3    cup water
3/4    cup uncooked regular long-grain whiter rice (I used brown rice,  which takes longer to cook so I should have increased my liquids a little bit and my cooking time)
1/2    tsp. onion powder
1/4    tsp. ground black pepper
2    cups frozen mixed vegetables (I only had a can of vegetable medley)
4    skinless boneless chicken breast halves
1/2    cup shredded cheddar cheese

Directions
Step 1

Stir soup, water, rice, onion powder, black pepper, and vegetables in 11×8″ (2qt.) shallow baking dish.

Step 2

Top with chicken. Season chicken as desired. Cover.

Step 3

Bake at 375′ F for 50min. or until chicken and rice are done. Top withe cheese. Let casserole stand. Stir rice before serving.

 

I was searching for popsicle recipes and came across this yummy dinner recipe. Since it doesn’t have too many ingredients I was able to make it right then! Even my some what picky 6 year old loved this and had thirds! Try it, you’ll like it!
